This is our very first cookbook based on Yardbird Hong Kong and we could not be more excited to share it with all of you. Matt has worked so hard to reveal the details behind Yardbird’s signature recipes, together with in-depth explanations of how we source, butcher, skewer, and cook each part of the chicken over binchotan charcoal.
This is the first comprehensive book about yakitori to be published in English, but it’s not only about chicken and charcoal. Our book is a timeline of our story – where we started, how we grew, and where we are today. It’s about our team (past and present), the Yardbird family, and all of the people who have supported the dream of making Yardbird the best that it can be.
