From April 19-21, Chef Matt Abergel, Chef Jeff Claudio, and Chef James Henry took over the kitchen at Kim Yang, one of the oldest Chinese restaurants in Paris for 3 special pop-up dinners. Joined by Yardbird’s Head of Operations, Kenneth Chan, the three Chefs (AKA scumbags) created a menu inspired by their late nights/early mornings in Hong Kong. In collaboration with Brooklyn Brewery, this event was one for the books and included dishes like Pork & Ramp Dumplings, Prawn Toast, Lobster & XO Sauce, Sweet & Sour Sweetbreads, and much more – all paired with Brooklyn Brewery’s finest bottles.
